Yesterday was our first plantarian Easter. Our son Justin had ham. On this one, we’re letting him come to his own conclusions as to whether or not to live the way his folks do.
Dinner was delicious. I didn’t feel like I had to lay down and take a nap after, clothes fit the same as they did yesterday.
You don’t have to wait for Easter to have this. You can have this anytime. I know Renee will be making the carrot cake again. But this time she’ll use Date Sugar instead.

Renee’s Scalloped Potatoes
10 small red potatoes
1 chopped onion
1 1/2 cup coconut milk
2 tbsp Earth Balance spread
2 tbsp Spelt Flour
Saute onions in Earth Balance and water. Slice potatoes, add in. Add coconut milk to onions and cook till bubbling.
Layer potatoes in casserole dish. Pour half the milk mixture and repeat to make another layer. Cook @ 350 for 40 minutes covered. Then uncover and cook another 30 t0 40 minutes.
