Day 95.
We’re doing this because living this way is in tune with what we believe in.
Living this way we’re doing what we can to see that Monsanto and their ilk doesn’t take over our food system. We’re helping small farmers, the little guys. We’re helping save the planet. We’re putting politicians on notice that if you want our vote, you better walk the walk. It’s our way, or no way.
We’re also thumbing our nose at our healthcare system. The only way to stop Vail Valley Medical Center and their partners from ripping us off is to do all we can to not support their business. Living this way is the cheapest health insurance we know of. One day at a time we’re doing what we can to stay out of their business.
Bonus is that the food is delicious. Renee and I were talking the other night, how our taste buds have changed. Junk food, comfort food, doesn’t sound good to us now. A One Plate, however, does. Real food, is really all we want to eat now.
Eating this way isn’t expensive, in fact it’s low cost. A big bag of beans and rice would cost about $10. A person could eat that for a month and be way healthier than not.
When we first started it seemed daunting. Now we’ve discovered free resources out there such as NutritionalFacts.org that help sort things out. 95 days in, getting healthier is delicious and fun.
Still have a lot to learn. We want to learn more about super foods, start planning our meals to have a lower glycemic index score. I just ordered Blue Zones Solution, I’ll be blogging about that journey now.
It doesn’t take a lot of time. Renee spends a couple hours a week cooking. On that note here’s a One Plate – left overs combined. Yummy.
