Tonight Renee celebrated 10 years. Awesome.
Tonight we also had the best 4th of July meal we’ve ever had. Not only that, it was the healthiest.
Renee made the veggie burgers from Rich and Julie’s book, The Plant Power Way. She also made Rich and Julie’s potato salad from the book. Plus we had organic corn.
For desert Renee made coconut ice cream pie. She used SoDelicious Coconut ice cream. She made the crust out of organic rolled oats, sorghum flour, baking soda, vanilla, coconut sugar, cacao powder, and organic apple sauce. She made the crust, put the ice cream on top.
I’m telling you, it’s the best 4th of July meal we’ve ever had. I feel totally satisfied, but not full. Rich and Julie’s burgers and potato salad are the best burgers and potato salad we’ve ever had. The potato salad is really yummy and it’s light. I don’t feel bogged down. In fact I could go for a run if I wanted to. I’m not going to, we’re going to watch fireworks now.
